Do you want to be original with your BBQ dish? Make these pinwheels from pork tenderloin with just a few simple ingredients. The preparation will take you 15 minutes, so will the grilling. On a kamado (also called ceramic BBQ) you can grill for four seasons because it insulates well and is lockable. We grill all year round!
Ingredients for 4 people:
4 pinwheels
2 pork tenderloins
8 slices bacon
Olive oil
About 3 tablespoons mustard
About 2 tablespoons of honey
A large tablespoon of Outlaw BBQ Red Rooster Dry Rub
Skewers
Side dishes (optional): zucchini, bell pepper and bag of lettuce; precooked potatoes or potato wedges.
How to build BBQ pinwheels?
Put the olive oil, mustard, honey and the rub herbs in a bowl and stir everything nicely. Place the pork tenderloins and cut them lengthwise into four long strips. Then grease the strips of meat with the marinade. Place a slice of bacon on each bar.
Then put two bars on their side (the narrow side) and place them tile-wise against each other so that one protrudes about four centimeters from the other. Grab a protruding point and roll it in. This way you automatically take the second bar with you in the roll. Roll it all the way up and stick both skewers through the meat. Don't have long skewers at home? With bubble sticks it also works. Then prick four of them. This is less firm and more difficult to turn around. But with a little policy, this also works fine.
Grilltime!
Let the pork tenderloin rest for a while so that the herbs can absorb. Make sure that the BBQ reaches a temperature of about 170 degrees. At this temperature you can also grill roasted potatoes and grill vegetables for the ready-made bag of lettuce (dressing over it, done!). This way you can make your entire meal from the BBQ. Roasted potatoes (we used precooked wedges, potatoes are of course also fine) should be about 20 to 30 minutes at 170 degrees. So put it on top of it in the skillet first. Of course a little olive oil on top (really only a little so that it is just all wet, because a good seasoned skillet ensures that it does not burn or dry quickly), herbs over it (our Black Snake Rub is really the perfect combination with potatoes!!!) and roasting. Occasional pricking to check doneness. We immediately grilled the vegetables with the potatoes. Then they could get off in time to cool down and scoop through the salad.
You bake the pinwheels in about 15 minutes om both sides medium to well done. The longer you bake the more well done it will get. Adding a handful of smoke wood chips before you start grilling meat is always great. Our whole family enjoyed this meal!
